Climate Effect on Morphological Traits and Polyphenolic Composition of Red Wine Grapes of Vitis vinifera

Wine quality is determined by the development of grape maturation, which highly dependent on climate variations. Extreme weather events are becoming more common, will affect productivity and grapes wine. Grape depends many factors, including weather, extreme influence berry size, skin thickness some key compounds, such as phenolics. In this work, ripening evolution phenolic content Vitis vinifera extracts from a vineyard in Alentejo (Portugal) were evaluated two distinct climatic years. During period, conditions ripening, thereby red wine quality, was assessed. The results demonstrate differences polyphenol compounds between years importance monitoring their during maturation. reduction apparently due to lower pluviosity higher temperatures, resulted polyphenolic related quality.
